Violet Meat Roast!!!( Shredded Chicken Roast)

Hello Fans!!!! I am super excited to share this recipe with u guys

It is said that no one is born master chef but one learns with practice or I would rather say some just have that magic to their hands and for sure My MIL’s touch to this recipe is mind blowing.

Though she is not much into cooking or rather she doesn’t boast about it but there are quite a few dishes that she makes super delicious. eg: her veg pulao, bombil chutney, bombil fry,pork vindalo, chicken chilly are few of them

When I had this dish for the first time made by my MIL made with beef ,though I don’t eat beef I sure relished the juicy potatoes that go in this recipe, since then I am a huge fan of this dish

I somehow managed to convince her to take the step by step pics while she made this dish for us on one fine Sunday lunch during the lockdown2020

Let me start by how did this recipe get it’s name “Violet meat Roast”

Violet was my grand MIL and this recipe is inherited from her by my MIL and now on by me!! Hence the name suggested by hubby!!

Every time my MIL makes this dish it turns out super delicious and we can’t stop at one serving

The original recipe calls for beef but in this recipe we used Chicken instead and it’s the same taste wise

Chicken is cooked with whole spices and than shredded and roasted in juicy onion n tomatoes and finally coated with fried potatoes which turn out juicy as well!!

I definitely need to try my hands on this recipe coz they say the way to MIL’s heart is to make sure her Son is fed well and the way to a Mans heart is to cook like his Mother does!!! #fingerscossed

Let’s get started with the recipe

Ingredients

2kg chicken (cut big pieces)

4big onions finely sliced

4 Tomatoes finely chopped

6/7potatoes sliced

Half bunch finely chopped coriander

1tsp peppercorns

2inch cinnamon

10/12cloves

8/9 dry kashimiri chillies

6/7 green chillies

1tbsp ginger garlic paste

Step by Step Method

Marinate the chicken with ginger garlic paste, lime juice, and salt for 1hour

Next heat oil and fry the whole spices on low flame followed by adding dry red chillies n fresh green chillies.

Next add in the marinated chicken and mix well

Mix very well as shown in below video

Next cover the vessel with lid and pour water on top as shown in next video ans let the chicken cook on low flame for 15/20min

Once the chicken is cooked it will leave water save this water (broth)for futher use


Until here the process can be done overnight and kept in fridge once the chicken is cool

Next day shred the chicken from the bones n discard the bones

Chicken is shredded and kept ready along with the whole spices for further process

Next heat oil add finely sliced onions and fry well adding salt to it

Next add in tomatoes along with turmeric and fry well until mushy

Next add ginger garlic paste and fry well on low flame

Once nice and mushy add black pepper powder followed by adding the previously shredded chicken

Mix well as shown in below video on low flame

Next add the chicken broth which was previously saved, mix well and let it cook until the broth absorbs a bit (don’t make it completely dry)

Switch off the gas and add chopped coriander and mix well and keep aside

Next slice potatoes add salt n shallow fry

Add the fried potatoes to the chicken and mix well but very very gently and cover for sometime the poatoes will turn nice juicy

Taddaaa!! Violet Meat Roast is ready to be served with pulao rice or can be simply enjoyed with pao

Important points

*The first 9steps can be done over night if it’s time consuming

*If u wish to make this with beef meat the recipe remains the same , but only make sure u cook marinated beef in a pressure cooker without adding water as beef will leave water, also make sure after first whistle let it cook on sim flame (this whole process should take 30/35minutes ). Once the beef is cooked let it cool,once it’s cool shred the meat and keep ready for further steps .
